The history of this salad comes from Koreans who immigrated to the Soviet Union in search of better jobs and lives. They were forced from their homes and pushed into Uzbekistan and Kazakhstan. They didn’t have kimchi or the ingredients to make it and were looking for an alternative that reminded them of home. Using what they had, this carrot salad was born.
The original name of this salad is Morkovcha, which is what you can search for in grocery stores in Eastern Europe and Asia.
Ingredients
- 7 large carrots, shredded ( you can use a bag of shredded carrots)
- 10 garlic cloves, minced
- 1/4 cup olive oil 1/2 cup white vinegar
- 1 tsp salt
- 1 tbsp ground coriander
- 1/4 tbsp smoked paprika
- 1/4 tbsp chili powder
- 1/4 tbsp white pepper
How to Make korean carrot salad
- Add salt and white vinegar to shredded carrots and mix well.
- Let sit while you prep other ingredients.
- Add garlic, ground coriander, white pepper, paprika, and chili powder to carrots.
- In a pan, heat up olive oil.
- Pour over spices and garlic.
- Mix well.
- You can store in the fridge for up to 5 days.
